Vegan food

1 cucumber
1 sweet pepper
1 small onion
2-3 cloves of garlic or garlic scapes
1 handful of parsley
1 large tomato
2 scallions
1 zucchini (optional)
Some leafy greens (optional)
1/4 tsp. ground cumin
2 tbsp. wine vinegar
Juice of 1 lime and ½ lemon
2 tbsp. olive oil
Salt and pepper to taste
2-3 drops of hot sauce (to taste)

Process in food processor until smooth.
When smooth, mix with 4 cups of tomato juice.
Chill and serve.

If you like some texture, reserve 1/4 of the cucumber and 1/4 of the tomato, chopped, and put in just before serving.
